Mayonnaise.

It has been super quiet this summer on the blog front. We have big and very exciting changes happening in our family life, so this blog, as well as the business, has taken a spot on the back-burner of life! In the meantime, let me leave you with another recipe... The last recipe we featured came from my own mom. This one comes from her too. Have you ever made your own mayonnaise? According to Julia Child, she had discovered a foolproof method of making her own mayonnaise recipe. Her key was warming the mixing bowl in hot water to take the chill off the egg yolks. While I use her hollandaise recipe all the time, I have yet to try her mayonnaise recipe. Instead I use my mom's mayonnaise recipe, which I would like to share with you at this time.

3/4 C  flour
1 C  water
Cook until it forms a ball and leaves the sides of the pan.

Put into the mixing bowl:
1  egg
1/4 C  vinegar
3/4 C  salad oil
1 tsp.  dry mustard
1 1/2 tsp.  salt

Add the flour mixture a little at a time and beat until smooth. Makes over a pint. Store in refrigerator.

  1. The flour must give this mayo version a lovely creamy consistency! Thanks for sharing. :-)
