Pecan Pie.

This Thanksgiving, I made my first pecan pie. Ever. I'm not a local southerner and I have not grown up eating pies with nuts in them. But when I married my southern husband, I got my first taste of a pecan pie. Delicious. Somehow a homemade pecan pie far surpasses a pecan pie purchased from a grocery store. A friend of mine was telling me how simple it was to make pecan pies. For some reason I've thought of them as intimidating. It's easy to get a bad pecan pie, and it's a lot harder to find a good pecan pie. It seems as though everyone makes them differently. So grabbing a good ole southern church cookbook, and the ingredients that my friend puts in her own pies, I came up with the following.

Pecan Pie

1   cup     Karo light syrup
1   cup     Light brown sugar
3              Eggs
1   tsp      Vanilla
2   cup     Chopped pecans
1   stick   Butter

Preheat over to 300 degrees. Mix syrup, eggs, vanilla, and pecans. Add butter. Pour into unbaked 9" pie shell. Bake for 1 hour.
