Andes Peppermint Crunch Bites.
Tis the season of cookie exchanges, extra baking at home, and get togethers with friends. Last night we had a potluck cover dish meal at our church while everyone chatted with each other and made advent wreaths for the Christmas season. A friend of ours brought this delicious dessert, using Andes Peppermint Crunch baking chips. You can find them on Amazon right here, or you can purchase them during this time of the year in most grocery stores. My favorite thing about this recipe is that it is only two ingredients!
1 Package of Andes Peppermint Crunch baking chips
1 16 oz can of vanilla frosting (Betty Crocker, etc.)
Melt the baking chips in the microwave, making sure to not burn them. That means microwave in small increments of time and stir in between. Once baking chips are all melted and creamy, combine with the can of vanilla frosting until there is an even consistency. Spread out on a buttered or sprayed nonstick pan and allow to harden in the refrigerator. Once hard, cut into bite sized pieces and serve.
My friend that gave me this recipe also uses different flavored chips (chocolate, peanut butter, butterscotch) and different flavored icings for a variety, all prepared the same way. She has tried semi-sweet chocolate chips, milk chocolate icing, and added butter toffee bits. Also delicious. Feel free to come up with your own creative concoction.
