As parents, we've been trying to make a conscious effort to eliminate sugar in our daughter's diet. With her birthday coming up, she requested a cake, but we decided to make a watermelon cake and decorate it with fruit. This all fruit cake was a big success. Not only was it healthy, it was delicious, and she never missed having a cake slathered with frosting and baked with sugar. We used fruit that was in season at our local grocery store. Sliced up strawberries, cantaloupe cut outs, and blueberries were the perfect accessory to the watermelon base.

Baby Stroller Cake.
Occasionally, I make and decorate cakes. Years ago, a friend of mine talked me into signing up to take Wilton cake decorating classes at Micheal's craft store. I had a wonderful teacher, and so I kept taking classes with her. I think I took four cake decorating classes with the one instructor. This particular cake I made for a coworker's baby. I used a Wilton cake pan - one that you can switch the colors and designs of the stroller on for different parties.
